While minimal washing up and easy cooking is a win anytime of the year, one pot meals are even better in winter when they’re made with heart ingredients and warming, comforting carbs.

One Pot Creamy Chicken Mushroom Florentine

Decadently creamy and delicious, this one pot pasta dish is jammed with crispy, golden chicken, tasty sun dried tomatoes, spinach and mushrooms. Rich in flavour and nutrients, it’s ready and on the table in under 30 minutes. If you feel like being a bit heathier without losing any of the taste, substitute the pasta with spiralized courgette and enjoy a lighter version.

One Pot Spanish Chicken and Rice

This one pot Spanish dish has plenty of great flavour from the spicy chorizo, tangy green olives, smokey paprika and fresh parsley.  Simply brown the chicken in a Dutch oven, remove and cover with foil, sauté peppers, onions and garlic. Add the rice, wine, chicken both, garbanzo beans, tomatoes and spices. Add the chicken and chorizo. Bake for 30 minutes. Serve with olives and parsley.

One Pot Creamy French Onion Pasta Bake

This delicious dish is basically the classic winter warmer version of French onion soup, with the genius addition of pasta. It is very simple: caramelize some onions, add some red wine, mushrooms, chicken broth and pasta. Boil. Stir in cream. Top with cheese. Bake. Done. It could not be easier, or more cosy and warming. If you’re a fan of deliciously runny yolks oozing all over your food, then this is the recipe for you.  Crispy sautéed onions and potatoes smothered in a spicy tomato sauce and topped with oozing goat’s cheese and baked eggs – not to mention that sneaky bit of greenery supplied by the power-house that is kale – this on pot dish is delicious. While it would definitely work as a brunch dish served alongside fresh bread, it also makes a super quick and easy dinner, perfect for a week night when you want to get dinner on the table fast.

This simple recipe is not only packed full of healthy ingredients, but flavour as well. Full of veggies including carrots, celery, onions and spinach, it also has loads of fibre rich (and cheap!) lentils, and potatoes (which as well as being the perfect winter comfort food, also contain high levels of iron and vitamins C & B6). These simple ingredients are simmered to perfection in a mixture of cream, white wine and chicken broth (substitute for vegetable if vegetarian) and flavoured with bay leaf, parsley, thyme, salt and pepper.
